Ingredients
  

  • 1 large chuck roast (I love the one from Aldi that comes pre-seasoned!)
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 16 oz. can crushed tomatoes
  • 2-3 bay leaves
  • 1.5 cups beef stock
  • 1 package Birria Taco Seasoning ( prefer Carroll Shelby's)
  • 10 corn tortillas
  • 2 cups quesadilla cheese

Optional Toppings

  • 1 cup chopped cilantro
  • 1 cup diced onions
  • 2-3 limes, sliced

Instructions
 

  • Add your chuck roast, onion, garlic, tomatoes and birria seasoning to your slow cooker with beef stock.
  • Set your slow cooker to low, and cook for 6-8 hours until the beef is fall-apart tender.
  • Once the beef is done, shred your beef in a separate dish and reserve the broth.
  • OPTIONAL STEP: Dip your tortillas in the birria broth, fill with beef and cheese, then saute them in a pan with the smallest amount of oil until the edges get nice and crispy.
  • Top with your favorite toppings, and dip in the birria broth.
  • Enjoy this with an ice cold Mexican beer!
