Drumsticks are the most underrated thing in the box. They are cheap, they are forgiving, and the dark meat will not dry out on you the way a chicken breast will the second you look away. These get a BBQ rub, go low and slow until the skin renders and the smoke sinks in, then get basted with sauce at the very end so it glazes instead of scorching.
It is a Monday recipe because it is almost entirely hands off. Get them going, walk away, come back to dinner.

Tuesday: Sheet Pan Taco Fries
This is what ground beef is for on a weeknight. Crispy fries on a sheet pan, seasoned ground beef over the top, cheese melted into all of it, then piled with whatever cold toppings are in the refrigerator. It eats like something you would order at a bar and it takes one pan.
If you have a house full of people with different opinions about dinner, this is the recipe that ends the argument. Everybody builds their own corner of the pan.

Wednesday: San Francisco Pork Chops
Pork chops have a reputation for turning out dry, and it is usually because they were cooked too long with nothing helping them. These are seared and then finished in a soy based sauce that keeps them juicy and gives you something to spoon over rice.
Midweek is exactly when a recipe like this earns its keep. It tastes like you tried harder than you did, and it uses one skillet.

Skirt steak, peppers, and onions all roasted together on one pan. No grill, no standing over a hot skillet in August, and no separate pot for the vegetables. Slice the steak against the grain and pile everything into warm tortillas.
This is the dinner that makes a box feel like a splurge without actually being one. Skirt steak stretches a long way once it is sliced thin.

Friday: Slow Cooker Birria Beef Tacos
Chuck roast is the cut that rewards patience, and the slow cooker supplies the patience for you. Start it in the morning, forget about it, and by evening you have tender shredded beef and a pot of consommé for dipping.
Friday is the right night for it because the work happens hours before anyone is hungry. It also makes enough to carry into the weekend, which is the quiet reason I make it.

How to make one box stretch
A few things that help a box last longer than you think it will.
- Thaw on a schedule. Move tomorrow's protein to the refrigerator when you clean up from tonight's dinner. It becomes automatic after about a week.
- Split the big packages. Ground beef and chicken almost always come in a quantity worth dividing. Portion it before it goes in the freezer and you will never thaw more than you need.
- Let the cheap cuts do the weeknights. Drumsticks and chuck roast carry more meals than a ribeye will, and they are happier with a slow cooker and a rub.
- Keep the sides boring on purpose. Rice, tortillas, and a bag of fries cover four of these five dinners. The protein is doing the interesting part.
