Welcome to Our Dave Ramsey Era

Our family recently started following the Dave Ramsey program, and I’ll be honest: taking a hard look at your finances is not always comfortable.

There is a big difference between knowing you should spend less and actually sitting down, accounting for every dollar, and making a real plan for your money. We have some financial goals we want to reach, and right now, that means being much more intentional about where our money is going.

We’re using EveryDollar to build our monthly budget, track our spending, and give every dollar a job before it has a chance to wander off. One category that can get away from me quickly is groceries, especially when I shop without a plan or make too many trips to the store during the week.

That does not mean I’m suddenly serving beans and rice every night or that dinner has to feel like punishment. I still want meals my family looks forward to eating. I just want to be smarter about how I shop, use what I already have, and plan dinners that will keep us out of the drive-through.

These ten budget-friendly dinners are exactly the kinds of recipes I’m leaning on during our Dave Ramsey era. They use familiar ingredients, feed several people, and make eating at home feel like something we actually want to do.

How I’m Keeping Our Grocery Budget Under Control

For me, saving money at the grocery store is less about finding the absolute cheapest possible meal and more about using what I buy well.

A rotisserie chicken can become more than one dinner. A pound of ground beef can be stretched with pasta, beans, tortillas, or vegetables. Frozen ravioli and jarred sauce can give us a dinner that still feels like a treat for far less than ordering Italian food.

Here are a few things helping me stay on track:

  • Planning the week’s dinners before I place a grocery order
  • Checking the freezer and pantry before buying more food
  • Building meals around meat that is already on sale
  • Using rotisserie chicken across more than one recipe
  • Choosing meals that make good leftovers
  • Keeping a few dependable pantry and freezer dinners available
  • Limiting extra grocery-store trips during the week
  • Remembering that eating at home does not have to mean cooking everything from scratch

Most importantly, I am choosing recipes we genuinely enjoy. A cheap dinner is not a bargain if nobody wants to eat it and we end up ordering takeout anyway.

1. King Ranch Chicken Casserole

King Ranch Chicken Casserole is a Texas classic made with shredded rotisserie chicken, corn tortillas, a creamy sauce, green chiles, tomatoes, and plenty of cheese. It feeds a crowd, reheats beautifully, and can help stretch one chicken into a substantial family dinner.

Budget tip: Compare the price of a rotisserie chicken with raw chicken at your store. Depending on the weekly sales, the already-cooked chicken may be the better deal and saves you time, too.

2. V8 Veggie Beef Soup

My V8 Veggie Beef Soup is one of the best meals for making a pound of ground beef go a long way. Frozen vegetables, cabbage, tiny shell pasta, and a big bottle of V8 turn it into a hearty pot of soup with plenty for dinner and lunch the next day.

Budget tip: This is a great clean-out-the-freezer meal. Use the vegetables you already have instead of buying every ingredient separately.

3. Neiman Marcus Chicken Casserole

The name may sound expensive, but Neiman Marcus Chicken Casserole is made with the kind of simple ingredients you can find at any grocery store. Rotisserie chicken, sour cream, cheddar, bacon, and a buttery Ritz cracker topping come together in one 9x13 dish that can feed up to eight people.

Budget tip: Use leftover cooked chicken and whatever shredded cheese you already have. This is also filling enough that a simple vegetable on the side is all it needs.

These Salsa Chicken Baked Tacos start with easy slow cooker salsa chicken, crispy taco shells, and melted cheese. The ingredient list is short, everyone can add their favorite toppings, and taco night at home costs far less than dinner out.

Budget tip: Skip buying a long list of toppings. Use the lettuce, tomatoes, sour cream, salsa, or cheese that is already in your refrigerator.

5. Meatball Rigatoni

Meatball Rigatoni is hearty comfort food made with bite-sized meatballs, rigatoni, and a rich tomato sauce. Pasta helps turn the meatballs into a filling family dinner, and the leftovers may be even better after everything has spent the night together in the refrigerator.

Budget tip: Homemade meatballs are delicious, but frozen meatballs work when they are on sale or already in your freezer. Store-brand pasta is another easy swap that will not change the finished dinner.

6. Sausage Alfredo Ravioli

My Sausage Alfredo Ravioli combines frozen ravioli, Italian sausage, and creamy Alfredo sauce in one comforting dinner. It feels like something we would order at an Italian restaurant, but it is much less expensive to make at home.

Budget tip: Watch for frozen ravioli to go on sale and keep a bag in the freezer. You can also use mild or spicy sausage, depending on which one has the better price that week.

These 30 Minute Red Chicken Enchiladas use rotisserie chicken, red enchilada sauce, tortillas, and plenty of melted cheese. They come together quickly enough for a busy weeknight and satisfy the craving for Tex-Mex without paying restaurant prices.

Budget tip: This is a good second meal for a rotisserie chicken. Use part of the chicken for another dinner, then turn what is left into enchiladas later in the week.

8. Green Chile Smothered Burritos

Green Chile Smothered Burritos stretch ground beef with refried beans, then wrap everything in flour tortillas and cover it with green enchilada sauce and Monterey Jack cheese. They are hearty, cheesy, and made mostly with inexpensive pantry staples.

Budget tip: Refried beans add flavor, make the filling go further, and help turn one pound of ground beef into enough burritos for the whole family.

9. Creamy Chicken Noodle Stew

My Creamy Chicken Noodle Stew is a one-pot dinner made with shredded rotisserie chicken, carrots, egg noodles, and a creamy broth seasoned with Sazón, Caldo de Tomate, and adobo. It is filling enough to stand on its own, so there is no need to spend extra money making several side dishes.

Budget tip: Use leftover cooked chicken and any vegetables that need to be used. The noodles cook directly in the broth, which keeps the meal simple and the cleanup manageable.

10. Slow Cooker Chicken Spaghetti

Slow Cooker Chicken Spaghetti is a creamy, family-friendly dinner made without Velveeta. The slow cooker handles most of the work, and the combination of chicken, spaghetti, cheese, and Rotel makes plenty for dinner with a good chance of leftovers.

Budget tip: Pasta is one of the easiest ways to stretch a smaller amount of meat into a full dinner. This is also a great recipe for using chicken you cooked earlier in the week.

Budget-Friendly Does Not Have to Mean Boring

One thing I do not want during our Dave Ramsey era is to spend every night feeling deprived. We are working toward something important, but we still have to live our lives and eat dinner in the meantime.

For me, this is about being more intentional. It means planning before I shop, using the food we already have, and remembering that I can make something really good without treating every trip to the grocery store like I am catering a wedding.

Casseroles, soups, pasta, tacos, enchiladas, and slow cooker dinners may not be revolutionary, but they work. They fill everyone up, they make good leftovers, and they keep us from spending $60 on a random Tuesday night because nobody decided what to cook.

That is a win for the grocery budget and a win for real life.

Make a Plan Before You Shop

Choose three or four recipes from this list before your next grocery trip and look for overlapping ingredients.

For example, you could buy one larger rotisserie chicken and use it for the King Ranch Chicken Casserole and the Red Chicken Enchiladas. Ground beef could go toward the V8 Veggie Beef Soup and the Green Chile Smothered Burritos. Shredded cheese, tortillas, onions, garlic, chicken broth, and basic seasonings appear in several of these dinners.

That kind of overlap helps reduce waste and keeps you from buying ten entirely different lists of ingredients for ten different meals.
