You can use assorted bone-in chicken pieces, but you will need to check them individually as they cook. Smaller pieces may finish before larger chicken breasts. When you use all thighs, it is much easier to have the entire pan ready at approximately the same time.

My Note About the Breadcrumbs

Ina’s recipe calls for two cups of panko breadcrumbs. The coating was delicious, but there were a lot of breadcrumbs left when I finished coating my chicken thighs.

The next time I make this recipe, I will probably start with about 1½ cups of panko. That should still provide plenty for a generous coating without leaving quite so much behind.

The exact amount you need will depend on the number and size of your chicken thighs and how heavily you coat them. If you are preparing a whole chicken cut into eight pieces, you may use more of the original two cups. For a package of chicken thighs, starting with less panko makes sense. You can always add more to the bowl if you need it.

How to Make Ina Garten’s Crispy Mustard Roasted Chicken

Begin by preheating the oven and preparing a large rimmed baking sheet. Lining the pan with parchment paper or foil will make cleanup easier.

Add the garlic, fresh thyme, salt, and pepper to a food processor. Pulse until the garlic is finely minced. Add the panko, lemon zest, olive oil, and melted butter, then pulse just until everything is evenly combined.

Chicken thighs can vary considerably in size. An instant-read thermometer gives you a much more reliable answer than cooking time alone.

I served my crispy mustard roasted chicken thighs with Ina Garten’s zucchini gratin. The creamy zucchini and Gruyère balanced the tangy mustard coating beautifully.

You can make the breadcrumb mixture and mustard mixture a few hours in advance. Keep them covered separately in the refrigerator until you are ready to prepare the chicken.

For the crispiest coating, wait to dip and bread the chicken until closer to roasting time. If the coated chicken sits too long, moisture from the mustard and chicken can begin soaking into the panko.

You can also trim and season the chicken thighs earlier in the day. Store them covered in the refrigerator, then pat them dry again before adding the mustard mixture.

How to Store and Reheat Leftovers

Store leftover crispy mustard chicken thighs in an airtight container in the refrigerator for up to three days.

For the best texture, reheat the chicken in a 350°F oven or countertop air fryer until warmed through. Leave the chicken uncovered so the breadcrumb coating has a chance to become crisp again.

The microwave will heat the chicken, but it will soften the panko topping. It works when you need a quick lunch, but the oven gives you a result closer to the freshly cooked chicken.

  • Pat the chicken pieces completely dry with paper towels. Season both sides lightly with kosher salt and black pepper.
  • Dip each chicken piece into the mustard and wine mixture, coating it well. Press the skin side firmly into the seasoned panko mixture so the crumbs adhere in a thick, even layer.
  • Arrange the chicken on the prepared pan with the breadcrumb-coated side facing up. Leave a little room between the pieces so they roast instead of steam.
  • Roast for approximately 40 minutes. Increase the oven temperature to 400°F and continue roasting for another 8 to 10 minutes, or until the coating is crisp and golden brown.
