Creamy Boursin Chicken Stroganoff

This Creamy Boursin Chicken Stroganoff is an easy one-pan dinner made with tender chicken, mushrooms, garlic, and Boursin cheese for a rich, flavorful sauce that's perfect for busy weeknights.

Ingredients
  

  • 2 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoon olive oil
  • 2 tbsp butter
  • 8 oz baby bella mushrooms, sliced
  • ½ medium yellow onion, diced
  • 4 cloves garlic, minced
  • ½ cup dry white wine (such as Sauvignon Blanc or Pinot Grigio)
  • 1 cup chicken broth
  • 1 (5.2 oz) package Garlic & Herb Boursin cheese
  • 8 oz egg noodles, cooked according to package directions
  • Fresh flat leaf parsley, chopped, for garnish

Instructions
 

  • Bring a large pot of salted water to a boil and cook the egg noodles according to the package directions. Drain and set aside.
  • Season the chicken with the salt, pepper, and paprika.
  • Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5 to 6 minutes, stirring occasionally, until browned and cooked through. Transfer to a plate.
  • Reduce the heat to medium. Add the butter, mushrooms, and onion to the same skillet. Cook for 6 to 8 minutes until the mushrooms are browned and the onions are tender.
  • Stir in the garlic and cook for 30 seconds, just until fragrant.
  • Pour in the white wine, scraping up any browned bits from the bottom of the skillet. Let the wine simmer for 2 to 3 minutes, or until slightly reduced.
  • Stir in the chicken broth, then add the Garlic & Herb Boursin cheese. Whisk until the cheese has completely melted into a smooth, creamy sauce.
  • Return the cooked chicken to the skillet and stir to coat in the sauce. Simmer for 2 to 3 minutes until everything is heated through.
  • Add the cooked egg noodles and gently toss until evenly coated in the creamy sauce.
  • Garnish with fresh parsley and serve immediately.

Notes

  • Garlic & Herb Boursin gives the sauce incredible flavor without needing heavy cream or multiple seasonings.
  • A dry white wine adds depth to the sauce, but you can substitute an additional ½ cup chicken broth if preferred.
  • Serve with roasted broccoli, green beans, a simple salad, or crusty bread for a complete meal.
  • Leftovers will keep in an airtight container in the refrigerator for up to 4 days. Add a splash of chicken broth or milk when reheating to loosen the sauce.
