Crispy Potato Salad

- 1 lg. bag tater tots or potato rounds
- ¼ cup Duke's mayo
- 1 teaspoon garlic powder, salt and pepper
- 1 tablespoon dijon mustard
- 1 tablespoon lemon juice
- 1 16 oz bottle Wishbone Zesty Italian Dressing
- 1 tablespoon dried dill
- ½ cup chopped green onions
Prep your sauce first. Mix mayo, mustard, lemon juice, Italian dressing, dill and green onion. Refrigerate until ready to use.
Preheat oven to 425.
Place frozen tots on a baking sheet. Season with your salt, pepper and garlic powder.
Bake as the package suggests, or 22 minutes.
When the tots are done, let cool for about 5 minutes. They need to still be warm.
Coat tots in the sauce, and mix well.
Refrigerate for at least 2 hours before serving. Enjoy!
Tips for the Best Crispy Potato Salad
- Bake the tater tots extra crispy so they hold their texture
- Let the tots cool slightly before mixing
- Add bacon right before serving for the best crunch
- Don’t overdress the salad at first because the tots absorb moisture quickly
- Serve within a few hours for the best texture
