English Muffin Breakfast Pizza

These easy English muffin breakfast pizzas are topped with savory breakfast sausage, fluffy scrambled eggs, and plenty of melted Monterey Jack cheese. They’re perfect for busy mornings, weekend brunch, or stocking the freezer with a quick breakfast everyone can reheat and enjoy.

Ingredients
  

  • 1 lb breakfast sausage
  • 6 large eggs
  • 3 tablespoon liquid egg whites
  • salt, to taste
  • black pepper, to taste
  • 1 package English muffins (6 muffins)
  • 2 cups shredded Monterey Jack cheese
  • Chili Onion Crunch, or hot sauce, optional

Instructions
 

  • Preheat the oven to 400°F. Line a large baking sheet with parchment paper or foil for easier cleanup.
  • Separate the English muffins and split each one in half. Arrange the 12 English muffin halves cut-side up on the prepared baking sheet.
  • Toast the English muffins in the preheated oven for approximately 5 minutes. Remove them from the oven and set aside. Keep the oven set to 400°F.
  • While the English muffins toast, add the breakfast sausage to a large skillet over medium heat. Cook, breaking the sausage into crumbles, until browned and completely cooked through. Drain any excess grease.
  • Whisk the eggs and egg whites together in a bowl. Season with salt and black pepper.
  • Pour the egg mixture into a lightly greased skillet over medium-low heat. Cook gently, stirring frequently, until the eggs are softly scrambled. Avoid overcooking them because they will continue cooking in the oven.
  • Divide the cooked sausage evenly among the toasted English muffin halves. Top each one with scrambled eggs, followed by shredded Monterey Jack cheese.
  • Bake at 400°F for approximately 18 minutes, or until the breakfast pizzas are heated through and the cheese is completely melted.
  • Serve warm with chili onion crunch or your favorite hot sauce, if desired.

Notes

  • Cheese: Freshly shredded Monterey Jack will give you the smoothest melt, but I used pre-shredded cheese, and it worked just fine. This is an easy breakfast, so use what works for you!
  • Add some spice: Substitute hot breakfast sausage for regular sausage if you like a little heat. You can also finish the pizzas with chili onion crunch or a few shakes of your favorite hot sauce.
  • Freezer instructions: Allow the breakfast pizzas to cool completely. Arrange them in a single layer on a baking sheet and flash freeze until firm. Transfer the frozen pizzas to a freezer-safe bag or airtight container.
  • Reheating from frozen: Microwave one frozen English muffin breakfast pizza for approximately 1 minute and 30 seconds, or until heated through. Microwave times may vary.
  • Serving size: Each English muffin is split in half to make two individual breakfast pizzas, giving you 12 pizzas total.
