King Ranch Chicken Casserole

This easy King Ranch Chicken Casserole is creamy, cheesy, and packed with shredded rotisserie chicken, green chiles, tomatoes, and bell peppers. It comes together quickly with simple ingredients and bakes up bubbly and golden for an easy family dinner.

Ingredients
  

  • 3 cups shredded rotisserie chicken
  • 1 tablespoon minced onion
  • 1 tbsp minced garlic
  • 1 28 oz. can family size can, cream of chicken soup
  • 1 bell pepper, diced
  • 1 4 oz. can diced green chiles
  • 1 10 oz. can diced tomatoes with green chiles, drained
  • cup whole milk
  • 1 tablespoon taco seasoning
  • 8-10 corn tortillas, quartered or torn into pieces
  • 2 cups shredded cheese, cheddar or Mexican blend

Instructions
 

  • Make the chicken mixture. Add the shredded rotisserie chicken, minced onion, minced garlic, cream of chicken soup, diced bell pepper, green chiles, drained tomatoes with green chiles, whole milk, and taco seasoning to a large skillet or saucepan. Stir well to combine.
  • Cook the filling. Cook over medium heat, stirring occasionally, until the mixture is hot and the bell pepper has softened, about 5–7 minutes.
  • Layer the casserole. Preheat oven to 425°F. Lightly grease a baking dish. Cover the bottom with a layer of torn corn tortillas, followed by half of the chicken mixture and a layer of shredded cheese.
  • Repeat the layers. Add another layer of torn tortillas, the remaining chicken mixture, and finish with the remaining shredded cheese. Your final layer should be cheese.
  • Bake. Bake uncovered at 425°F for about 20 minutes, or until the cheese is melted, golden, and bubbly.
  • Serve. Let the casserole rest for a few minutes before serving.

Notes

  • Rotisserie chicken: This is one of my favorite shortcuts for this recipe. No chicken thawed? No problem.
  • Cheese: Mexican blend, cheddar, or Monterey Jack all work well.
  • Tortillas: Tear the corn tortillas into bite-size pieces so they're easy to layer and scoop.
  • Spice level: The green chiles and taco seasoning give this plenty of flavor without making it overwhelmingly spicy.
  • Don't skip the bubbly cheese: Bake until the top is genuinely golden and bubbly. That's the good stuff.
