Wash and thoroughly dry the strawberries.
Slice off the stem end so each strawberry sits flat.
Cut the strawberries in half lengthwise.
Fill each strawberry with prepared cheesecake filling using a spoon or piping bag. You can even use a ziploc bag with the corner tip snipped off.
Top each one with a fresh blueberry.
Dust lightly with powdered sugar just before serving, if desired.
Serve immediately or refrigerate until ready to enjoy.
- Dry the strawberries well so the cheesecake filling stays in place.
- A piping bag (or ziploc bag with the corner snipped) makes filling the strawberries quick and neat.
- These are best served the same day they're assembled.
- Refrigerate until ready to serve.
- Try raspberries or blackberries for a fun variation after the holiday.
