Red, White and Blue Strawberry Cheesecake Bites

Need an easy Fourth of July dessert? These Red, White & Blue Strawberry Cheesecake Bites are made with only three ingredients and are always a crowd favorite. Perfect for cookouts, potlucks, and summer parties!

Ingredients
  

  • 1 lb strawberries, sliced in half
  • 1 8 ounce container, prepared cheesecake filling
  • ½ cup fresh blueberries
  • ¼ cup powdered sugar, for dusting (optional)

Instructions
 

  • Wash and thoroughly dry the strawberries.
  • Slice off the stem end so each strawberry sits flat.
  • Cut the strawberries in half lengthwise.
  • Fill each strawberry with prepared cheesecake filling using a spoon or piping bag. You can even use a ziploc bag with the corner tip snipped off.
  • Top each one with a fresh blueberry.
  • Dust lightly with powdered sugar just before serving, if desired.
  • Serve immediately or refrigerate until ready to enjoy.

Notes

  • Dry the strawberries well so the cheesecake filling stays in place.
  • A piping bag (or ziploc bag with the corner snipped) makes filling the strawberries quick and neat.
  • These are best served the same day they're assembled.
  • Refrigerate until ready to serve.
  • Try raspberries or blackberries for a fun variation after the holiday.
