Add the sausage to a large skillet over medium heat. Cook until browned and cooked through, breaking it into bite-size pieces as it cooks. Transfer the sausage to a plate.
Add the sweet potato to the same skillet with 1–2 tablespoons of water. Cover and cook for 8–10 minutes, stirring once or twice, until the sweet potato is tender.
Add the butter, apples, onion, and a little minced garlic. Cook until the apples and onion are tender.
Stir together the whole grain mustard, soy sauce, and minced garlic for the sauce.
Return the sausage to the skillet and stir everything together. Serve in bowls with the mustard sauce.
- The sausage is already seasoned, so it doesn’t need much added seasoning.
- Cut the sweet potato into small, even pieces so it cooks through in the covered skillet.
- Adjust the minced garlic in the sauce to your taste.
